THE BEST Key Lime Pie

1. Preheat oven to 375 degrees.
2. In a food processor combine graham crackers and sugars and pulse until a crumb forms.
3. With the processor running, pour your butter in until the mixture forms a sand texture.
4. Place your graham cracker mix into your pie dish and press gently until the dish is completely covered. You want about 1/8 inch thickness.
5. Bake for 12 minutes and set aside to cool. Leave the oven on.
6. In a large bowl combine sweetened condensed milk, egg yolks, fresh lime juice and Nellie’s lime juice. Whisk until completely combined and mixture is silky.
7. Lay your pie shells on a baking sheet. Pour custard into prepared crusts. Bake for 15 minutes, until just set.
8. Let sit until cooled and then place in the refrigerator for at least an hour.
9. When you’re ready to serve make your whipped cream. Using a stand mixer with the whisk attachment, or handheld mixer. Begin mixing cream on medium speed. As it whisks add in your sugar. Let whisk until whipped cream is formed. Do not over mix or it will curdle.
10. Top your pies with your whipped cream, some lime zest and slice of the key lime.
11. Dig in and enjoy a taste of summer!
