Some nights cooking is the last thing I want to do, but everyone needs to eat - and after a full day of school and dance we need a solid meal. Enter the taco bowl. These could not be easier and everyone loves them!!
1. Cook yellow rice in beef broth according to directions - should take about 20 minutes! 2. Drain 1 can of corn and place on parchment lined baking sheet. Season with oil, salt, pepper and garlic powder and roast at 400 degrees for 15 mins. 3. While those cook, cook 1lb ground beef with a little mild taco seasoning until nice and brown. To assemble, chop up some avocado, open a bag of slaw mix and lay out a small flour tortilla and break up a hard shell taco. Top with sour cream and shredded cheese. For the adults I add cilantro and scallions - and hot sauce for added heat!
