This insanely delicious one pot dinner is a protein and flavor packed meal the whole family can enjoy! I have made this dish every week - often multiple times - since creating it, and whenever there are leftovers it’s just as delicious reheated!
1. Before you begin make sure all of your ingredients are prepped and ready.
2. In a large pot cook your sausage until browned, remove onto a paper towel lined plate using a slotted spoon and set aside.
3. Drain out most of the oil from cooking the sausage, leaving just a coating on the pan.
4. Pour 1/4 cup of beef broth to your pot and stir, getting all the browned bits up from the bottom. Add in your shallots and garlic and cook until fragrant and slight softened.
5. Next add your broccoli and cherry tomatoes to the pan and stir to combine. Cook, stirring occasionally until the broccoli is vibrant green - about 3 minutes.
6. Pour in your orecchiette, and mix to incorporate the pasta with the veggies. Cover with the remaining 4 3/4 cups of bone broth. Bring to a boil, cover and turn heat down to medium high.
7. Let cook, stirring occasionally, until all the broth has been absorbed into the veggies and pasta, and the pasta is cooked through.
8. Remove from heat, add in your sausage and pesto, and stir to combine.
9. Serve over a dollop of ricotta and top with a touch of fresh basil.
