This Pulled Pork with crisp apple slaw really hits the spot! It’s sweet, savory, crunchy, creamy - everything you want in a delicious, comforting meal. Plus thanks to the crockpot it’s minimal effort and minimal mess.
1. Place pork butt in the slow cooker and coat with spices except cornstarch. Turn and rub until well covered.
2. In a medium bowl mix your sauce ingredients. Pour over the pork and again turn the pork in the sauce until we’ll coated. Cover and cook on low for 6 to 8 hours.
3. Thirty minutes before you’re ready to eat, remove pork and set aside. Whisk in cornstarch until there are no lumps.
4. Shred your pork using forks and return the shredded meat to the sauce. Cover and cook on high for 15 minutes.
5. Make your slaw. Combine yogurt, mayo, vinegar and sugar and whisk well. Add in slaw mix, apple and pomegranate and gently fold until combined.
6. Serve together and enjoy!
