20 mins prepServes 4
This delicious one pot dinner is light and summery while still being a fabulous hearty meal. The lime replacement in the pesto gives it an unexpected brightness and then beans pack this vegetarian dish with protein.
1. Make your pesto. In a food processor combine, basil, oil, walnuts.
2. Heat a large pot over medium high heat. Add in your oil and then onion and shallot and cook until fragrant and translucent.
3. Add in your orzo and stir to combine with the onions. Pour in your stock, bring to a boil, and then lower heat to a simmer. Cover and let cook about 20 minutes, stirring occasionally until orzo is al dente.
4. Drain and rinse your beans, chopped your kale and measure your peas while the orzo cooks.
5. Add in your beans, peas and kale. Stir gently to combine.
6. Serve garnished with some fresh basil leaves and a squeeze of fresh lime.
