An accidental, yet very delicious, nectarine cake recipe, born from a baking mishap. This recipe features a moist yellow cake base with a mix of melted butter, brown sugar, and sliced nectarines baked in a 9x13 dish, perfect for a summer dessert.
Preheat oven to 350 degrees. In a mixer (or large mixing bowl and hand mixer) cream together butter and sugar until light and fluffy. Add eggs one at a time, waiting until each is fully incorporated before adding the next. Add your mayo and vanilla and mix until just combine. Add your baking soda and baking powder as well as 1/3 of your flour. Mix on low and add 1/2 your milk. Alternate the remaining flour and milk, ending with flour. Add your melted butter, brown sugar and fruit to a 9X13 baking dish. Top with your cake mix and stir gently to combine. Bake for 40 minutes. Serve and enjoy! Feel free to top with some vanilla ice cream, fresh whipped cream or even a drizzle of fresh caramel sauce.
