Fool The PTA Cupcakes (Doctored Box Mix with Homemade Buttercream)

For the cupcakes:

1. Prepare the chocolate cake mix according to package instructions, but make these two substitutions:

   - Replace the water called for in the instructions with an equal amount of coffee.

   - Add 1/3 cup of mayonnaise to the batter.

2. Bake the cupcakes according to the instructions on the cake mix box.
3. Once baked and cooled, ice the cupcakes.

For the homemade buttercream:

1. Start by creaming the 2 sticks of salted butter in a mixer until light and fluffy.
2. Turn off the mixer and add in the 4 cups of powdered sugar.
3. Begin mixing on low speed until the sugar has combined with the butter.
4. Add the 2 teaspoons of vanilla and 1 tablespoon of heavy cream.
5. Mix on medium-high speed until the frosting is smooth and creamy.
