Favorite Chicken Tacos (Baked or Air Fried)

1. Preheat oven or air fryer to 400 degrees.
2. Make your shredded chicken by boiling chicken breasts in vegetable stock with an onion and some garlic. Once cooked let cool slightly and shred (I use my kitchen aid)
3. Heat 2 tbsp olive oil in a large pan. Add onion and cook until golden. Add your shredded chicken and stir to combine.
4. Add your seasonings and stir. Then stir in your beans.
5. Finally mix in your enchilada sauce and then yogurt. Remove from heat and let cool for about 8 to 10 minutes. While it cools quickly warm your tortillas so they’re pliable.
6. Drizzle a generous amount of olive oil on a baking sheet. Coat corn tortilla and then stuff with 2 to 3 tbsp of filling and some cheese. Fold in half.
7. Bake at 400 for 30 minutes, until crispy. Or air fry at 400 for 8 to 10 minutes.
