Delicious Mac and Cheese (with customizable cheeses)

This Mac and Cheese is delicious and versatile! The base recipe works with any cheese of your liking, whether you prefer sharper and more intense cheeses or something milder like a mix of gruyere, asiago, and cheddar.
1. Shred all of your cheeses. I like using my food processor!
2. In a large measuring cup, combine milk, cream, stock, mustard and seasonings. Whisk together and set aside.
3. Bring a pot of water to a boil. While that is getting started, melt butter in a large pot over medium heat.
4. Sprinkle in your flour and whisk well until it is totally mixed and there are no lumps. Lower the heat to medium low and pour in your milk mixture while whisking continuously.
5. Let your rue cook, mixing often, until it has thickened - about 3 to 8 minutes.
6. Add in your cheese in 1 cup increments. Whisking until each addition has fully melted. Once all the cheese is in and the sauce is made, taste and season to your liking!
7. Drain your pasta and add directly to your sauce and stir to combine.
8. We like topping with toasted breadcrumbs and scallions (and some hot sauce!)
