Crockpot Tortellini Soup

1. Heat oil in a medium pan over medium high heat. Add in sausage and begin to brown.
2. As sausage begins to brown add in onions and stir to combine. Once onions are translucent stir in garlic and continue cooking 3 or so minutes.
3. Add your sausage and onion mixture to your crockpot. Then add in carrots, crushed tomatoes and chicken stock.
4. Cover and cook, set on high for 3 to 4 hours or low for 6 to 8 hours.
5. 30 minutes before you are ready to eat add in your spinach and tortellini, recover and let cook until ready to serve!
6. Taste and season with salt if needed. I find that the tortellini is often salty so not much salt is needed. Serve and enjoy!
