A delicious and healthy one-pot meal for the whole family, featuring creamy orzo, sweet Italian sausage, butternut squash, and leeks. It can also be made dairy-free by using a non-dairy heavy cream alternative.
1. Heat a large pot over medium high heat. Add in 1 tablespoon of olive oil and let warm.
2. Add in your sausage, casing removed and break up using your spoon or spatula. Cook until browned. Remove onto a paper towel lined plate using a slotted spoon.
3. Add remaining tablespoon of oil to your sausage drippings. Add in your onion, garlic and leeks and stir to combine. Once onions are translucent and slightly golden add in your squash. Season with a sprinkle of salt and pepper. Add in 1/2 cup of vegetable stock and cook until liquid has evaporated and squash has softened.
4. Add in 1 cup of cream, 3 cups of vegetable stock and orzo. Bring to a boil and then reduce heat to a simmer and let cook until liquid has absorbed, stirring occasionally. About 8 minutes.
5. Add in remaining 1/2 cup stock and 1/4 cup cream cook until orzo is plump and cooked through.
6. Turn off heat and stir in your sausage.
7. Serve and enjoy! Top with some @violife or regular parmesan cheese or some fresh parsley or sage.
