Copycat Coffee Shop Breakfast Hash Brown with Egg and Cheese
10 mins prepServes 1
My favorite local coffee shop has this amazing breakfast that I am just obsessed with. Obviously I can’t go there daily so I decided to figure out how to make my own version at home and it is absolutely DELISH!
1. Place hash brown in toaster or air fryer and cook until crisp and golden brown.
2. While your hash brown cooks, make your egg. It’s a quick process!
3. Heat your pan over high heat and spray with oil spray. Crack your egg in and gently shape into a rectangle so it fits the hash brown. Flip, sprinkle with your cheese, cover your pan and remove from the heat to let the cheese melt.
4. To make your sauce mix your mayo and hot sauce until well combined.
5. To put it all together, start by placing your mayo on the plate. Then put down your hash brown, egg and finally a few pickled onions and chives.
6. Dig in and enjoy!
** To make pickled onions at home, slice a red onion very thin. Place them in a mason jar. Bring 3/4 cup apple cider vinegar, 1/4 cup water, 2 tbsp sugar and a sprinkle of salt to a boil. Pour your mixture over the onions and seal your jar. Let cool on the counter and then refrigerate for up to 2 weeks.
