20 mins prepServes 8
This delicious holiday Hors D’oeuvre is a beautiful combination of sweet, tart and savory, featuring caramelized onions and cranberry goat cheese on a puff pastry crust. It makes a stunning appetizer, especially when paired with arugula.
1. Preheat oven to 425 degrees.
2. Heat olive oil in a large pan over medium high heat. Add in your butter and oil and let melt.
3. Add your onions to your pan and sprinkle with the salt. Stir until coated in the butter oil mixture. Cover and lower heat to medium. Let cook for 8 minutes.
4. Remove cover and continue cooking, stirring occasionally, until onions are golden brown - about 30 minutes.
5. Remove and let cool.
6. Roll out your puff pastry sheet into a large rectangle and gently curl the edges to create a crust.
7. Spread your cranberry goat cheese across the bottom and then gently layer your onions across the entire top.
8. Bake for 30 to 40 minutes - until edges are golden.
9. Slice and enjoy!
